A prayer for no-bake cookies

Oh, great internet. Please grant me a good recipe for no-bake cookies. One with peanut butter and chocolate married with oatmeal. One which does not crumble into a zillion pieces when I try to eat it.

  1. Behold–For I have a most delectable recipe for a peanut butter, chocolate cookie that maintains its cookieness whilst being ett.

    (*disclaimer: this cookie contains no oatmeal and only crisps from being baked a while–what’s so wrong with that!)

    Let the deliciousness direct your heart. Some of my disciples have used ingredients to their taste, including cashew butter instead of peanut, etc. and they found treat nirvana just the same:

    1. Mix cocoa powder into almond meal and cinnamon, measures don’t matter–it all tastes good.

    2. Mix smooshed butter, peanut butter, with brown rice syrup (or your sweetener of choice).

    3. Chop spicy candied pecans (or nuts of choice). Combine both mixtures–bake flattened out spoon-sized balls at 350º until browned (about 10 minutes depending on size)–cool on a rack.

    Amen.

  2. 1/2 cup chunky style peanut butter
    1//4 cup butter, 15 large marshmallows, 1 cup quick cooking oats, 1/2 cup flaked coconut (or you might try choc.chips here instead of coconut).
    Here’s one:
    In a 2 qt. saucepan, combine peanut butter, butter and marshmallows. Cook over med. heat, stirring constantly until marshmallows are melted. Remove from heat and stir in oats and chocolate chips. Quickly drop by tsps. full onto wxed paper. Cool completely. cover and store refrigerated.

    OR: ~~~~~~~~~~~~~~~~~~~~~~~~~~~
    2 &1/2 cups granola, 1/ cup coarsely chopped salted peanuts, 1/3 cup raisins, 1 &1/2 cups semisweet choc.chips. 1/4 cup peanut butter, 1/4 cup corn syrup. Mix in a large bowl the granola, peanuts and raisins. Combine in a sauce pan choc.chips, peanut butter and corn syrup. Cook over low heat stirring until chocolate is melted and the mixture is smooth. Pour over granola mixture and toss until coated. Press on the bottom of a buttered 9 inch sq. pan. Cover, refrigerate about an hour. Cut into bars. Store in refrigerater.

    I picked up a no-bake cookie recipe from the first of the websites that Mike suggested and it was awful, which prompted this post. It was too hot to bake actual cookies, but the amount of heat generated by the stovetop is pretty contained.

    When it cools down, I will definitely try your recipe, Shelley. It sounds wonderful.
